When you are doing a quote is there any way that you can change the default units that appear?
Currently the units for edges is cm by default and we need it to be m and in the product when we allocate a material it is m not m2.

Your best bet with defining the units the way you want is to use Quote Templates. You can pick the units you want on the template, and then when your salespeople start a quote from a template, all of the units will be correct. Here's how to set up templates: Creating and Using Quote Templates
You can also change the units of measure, but this is a bigger deal, and will break some of your historical reporting. You might also want to consider creating a new unit of measure (under Admin->System Settings) and then you can either create a new product or change the units on an existing product.
