I want to put 8 granite colors on sale for 2 weeks and make sure my quotes always get the sale price for that period. I'll probably have similar sales on different colors later. What the best way to handle this?

Move the colors to a price group. You may want to name the price group "Promotion"

That will work if all of the colors are the same price. If the promotional colors have different prices, you'll need to create separate promotion price groups for each (for example "Cheap Promotion Colors" and "Expensive Promotion Colors").
